The vineyards are located in the heart of the Valpolicella area, on the oldest hills. The vineyard faces south. The vines grow according to a pergola system.

Made according to the traditional method of producing Amarone della Valpolicella. The grapes are dried until the end of February. Thereby 45% of the weight (moisture) is lost. When pressed, the must is concentrated and full of sweetness. It is slowly fermented in stainless steel tanks for four months until it is completely dry. After fermentation, the wine matures for three years in large French oak barrels.
The wine then rests in the bottle for another six months before being released to the market.

Just north of Verona lies Cantine Giacomo Montresor. Montresor is an Italian winery with a long history and tradition of winemaking, which originated in Orléans in the heart of France, where Claude de Montresor was Duke around 1600. In 1892, the family came to Veneto where they established a winery, which is now one of the traditional wineries for Amarone and Ripasso.

The focus of Montresor is on the production of DOC wines, typical for the region around Verona in the Veneto: Soave, Valpolicella, Bardolino, Valpolicella Ripasso and Amarone. Montresor also makes Prosecco. Montresor is particularly known for its various Amarone wines, from different vineyards, namely the Fondatore, the Capitel della Crosara and the Satinata (which stands out for its famous black-satin bottle).
