The grapes are fermented in stainless steel tanks. After fermentation, the wine will remain on stainless steel for another 12 months and mature on oak for another 12 months. Before it is put on the market, it stays on the bottle for a few more months.

Fosso Corno is a young wine company owned by brother and sister Marco and Sabrina Biscardo in the heart of Abruzzo. Fosso Corno was founded in 2001 with the aim of making beautiful wines based on the Montepulciano grape. The house makes various styles of Montepulciano d’Abruzzo: from supple and accessible to rich and powerful, using French oak.

The winery is located in the town of Roseto Degli Abruzzi in the Teramo region, with 30 hectares of vineyards on one hill, split into 17 different plots, each with its own terroir characteristics. Each plot, called ‘vigna’, has its own soil structure and position in relation to the sun. In addition, the winery enjoys a unique mesoclimate where the proximity of the sea and the Apennines have an important effect on the style of the wines. These cooling influences therefore ensure that the wines always have fresh acids in addition to structure.

The most unique wine of Fosso Corno is probably the Il Grande. For this Fosso Corno uses the unique drying technique “Taglio del Tralcio”: a selection of the best grapes is left hanging after the first harvest and dried directly on the vines for 20 days. Taglio del Tralcio’ literally means the cutting of the vine, and that is exactly what happens. By cutting the vine branches, the grapes no longer receive the usual nutrients, so they dry out on the vines. After the second harvest, the second must is added to the first must and undergoes a second fermentation, called Rigoverno alla Toscana. It results in a very ripe and rich style red wine with body and less acidity than usual for a Montepulciano.
