From a vineyard in ‘Favara San Cataldo’ at about 500 metres above sea level. The vineyard faces south and has a soil of clay and sand. After destemming and a 6-day maceration, the grapes are gently pressed and fermented in stainless steel tanks at a controlled temperature. The wine matures for a few more months in stainless steel tanks before it is bottled.
